How To: Coconut Almond Butter Cookies

Happy Monday, loves! I’m headed back from the desert today after a busy weekend at Coachella. Hope you caught the fun on Instagram + Snapchat!

We thought a perfect way to kickoff Monday was with a healthy cookie recipe. Jake and I make these ALL the time at home. Coconut almond butter sweets will make your heart [+ stomach] happy. These were included in my list of desserts when I wrote about about what I typically eat in a day. Happy eating!

INGREDIENTS  1 cup almond butter | 1 egg | 1/3 cup honey | 1 tablespoon cinnamon | 1/2 teaspoon baking power | 1/2 teaspoon baking soda | 1 tsp vanilla extract | 3/4 cup shredded coconut | 1/2 cup mini white chocolate chips | pinch of salt


Preheat oven to 350 degrees | Crack 1 egg in to a large bowl and whisk until frothy | Add baking powder, baking soda, cinnamon + salt | Add 1/2 cup shredded coconut into the bowl along with the honey, white chocolate chips, almond butter + vanilla extract | Mix all ingredients until smooth.

On a baking sheet lined with parchment paper, spoon dough into small rounds (about 1 tablespoon each) | The cookies will spread so make sure to space them out at least 1 inch apart | Top each cookie with shredded coconut | Bake for 12-15 minutes + let cool. Enjoy!
