Spike Your Summer Popsicles

It’s the weeeeeekend! You know what that means? Spiked popsicles.

Seriously, though. Why not enjoy summer’s best treat with a little added fun? My team and I had a little too much fun doing this post for you. We used Zoku popsicle molds from Williams SonomaHowever, you can also DIY it, by using ice cube trays or dixie cups with popsicle sticks.

Laurens-Lyst-Rum-Popsicle

Rum Berry. Muddle six raspberries, a sprig of mint, 1/2 teaspoon brown sugar +  a two wedges of squeezed lime. Pour the mix into a popsicle mold, filling the remainder with water. Place in the freezer and remove once solid. Serve in a cocktail glass with two ounces rum [alcohol doesn’t freeze, so don’t fill your molds with liquor]! While you’re lounging in the sun, don’t be afraid to let your popsicle melt — it will combine with the rum for a delicious, cool cocktail.

Now, for the kiddos…

Gummy Pop. Fill each popsicle mold with your favorite gummies [about six] + your favorite juice [we chose pineapple]. Place in the freezer and remove once solid.

Fruity Flare. Slice your favorite fruits [we used strawberries, kiwi, blackberries + orange]. Add the fruits to your popsicle mold + your favorite juice [we used lemonade]! Place in the freezer and remove once solid.
